Confederate Receipt Book

With the blockade of Southern ports and the lack of trading between the North and South during the Civil War, the Confederacy found itself in great deprivation, lacking its customary supplies. Showing great resourcefulness, southerners developed new ways to feed and clothe themselves and these adaptations and recipes were pulled together in 1863 by Richmond publishers West & Johnson, to share throughout the region in Confederate Receipt Book. The recipes were assembled from newspapers, staff, and other sources and were "designed to supply useful and economical directions and suggestions of cookery, housewifery, and for the camp." Examples of resourceful recipes in Confederate Receipt Book include apple pie without apples, artificial oysters, and coffee substitutes as well as medicinal remedies for headaches, croup, and sore throats and making household items like candles and soap. The nature and extent of the items highlight the degree of difficulty that the Confederates faced and their ability to acclimate to the supplies at hand. Other examples include recipes for making ink, wicks for lamps, fire balls for fuel, and bread from numerous types of flours. The Confederate Receipt Book has as much quaint and amusing charm to present-day readers as it had practical significance to the beleaguered South fighting for its independence. Published in 1824 in Washington, DC, Virginia Housewife is considered by many culinary historians to be the first real American cookbook, with recipes that originated in American kitchens, leaving behind British traditions, ingredients and methods. Virginia Housewife is also recognized as the nation's first regional cookbook with a focus on southern-style specialties, some appearing in print for the first time, such as Ochra Soup, Curry of Catfish, Gumbo, Chicken Pudding, Apoquiniminc Cakes. But author Mary Randolph also includes local variations of recipes from the West Indies, New England, Spain, and France, all reflecting the influence of many cuisines on Southern cooking. Diverse offerings include Dough Nuts, Gaspacho, Ropa Vieja, as well as a number of delightful ice cream recipes including, black walnut, quince, pear, citron, and almond. Seventy-Five Receipts for Pastry, Cakes, & Sweetmeats

Eliza Leslie's Seventy-five Receipts for Pastry, Cakes, and Sweetmeats was the first distinctively baking cookbook published in America, as well as the first to share ingredients in a systematic list order at the beginning of each recipe. As Eliza recorded at the time of initial publication, "All the ingredients, with their proper quantities, are enumerated in a list at the head of each receipt, a plan which will greatly facilitate the business of procuring and preparing the requisite article." Seventy-five Receipts was Leslie's first cookbook, and it was her most popular and influential cookery title. Featuring recipes ranging from Preserved Pine-Apple to Gooseberry Jelly, Curds and Whey, and Butter Biscuits, Eliza stressed that the recipes within the collection are "in every sense of the word, American," as opposed to the many British and French cookbooks being produced at the time. A Treatise on Bread and Bread-Making

Published in 1837, Sylvester Graham's “A Treatise on Bread and Bread-Making” includes a history of bread, discussion of various grains and which make the best breads, preparation of flour and other ingredients, the process of fermentation, how to prepare and bake bread dough, and discussion of bread varieties. The book describes Graham's preference for unadulterated flour that is free of chemical additives (used even in those early times to make bread whiter in color). He believed that firm bread made of coarsely ground whole-wheat flour was more nutritious and healthy. The treatise enthusiastically supports making bread in the home instead of buying commercial products, and the recipes were so popular that after publication, Graham was attacked by a mob of angry bakers in Boston.

The Kitchen Directory, and American Housewife

The first edition of this very popular nineteenth century cookbook was published in 1839 as The American Housewife, later expanded to The Kitchen Directory and American Housewife and often republished as The American Housewife and Kitchen Directory. Author Anne Howe's name did not appear on the title page until later editions published after this 1841 version. Her preface states that although she is not an Ude (French chef) or a Kitchiner (popular British cookbook author), she knows the culinary arts as "practiced by good American cooks." Bemoaning the inadequate instructions and limited practical knowledge expressed in other cookbooks, she presents over 350 recipes from the simplest broths to the most delicate cakes and sweetmeats with efficient instructions and practical economy.
In addition to her recipe collection, the book includes recipes on cookery for the sick and making perfumes, as well as sections on housewifery and carving that appear to be simply lifted from earlier works.

This cooking manual is based on the school's teachings, with heavy emphasis on preparing nutritious meals inexpensively.
This exceptional book by a remarkable woman in American culinary history was aimed at answering the question Corson posed in her manual, "How well can we live, if we are moderately poor?" She dedicated her life and her career to providing the answer in this book and others, to suggest recipes for "the most wholesome and palatable dishes at the least possible cost." Her basic concept involved the principles of using everything available and wasting nothing, avoiding expensive cuts of heavy meat and substituting several dishes such as soup, vegetables, fish, and bread, using lentils, peas, and macaroni as nutritious alternatives to meat, exploring gardens and fields for new delicious greens, such as dandelions, sorrel, chicory, and others to liven up meals, adding herbs and spices to make dishes more palatable. Originally published in London in 1727, The Compleat Housewife was the first cookbook printed in the United States. William Parks, a Virginia printer, printed and sold the cookbook believing there would be a strong market for it among Virginia housewives who wanted to keep up with the latest London fashions-the book was a best-seller there. Parks did make some attempt to Americanize it, deleting certain recipes "the ingredients or material for which are not to be had in this country," but for the most part, the book was not adjusted to American kitchens. Even so, it became the first cookery best seller in the New World, and Parks's major book publication. Smith described her book on the title page as "Being a collection of several hundred approved receipts, in cookery, pastry, confectionery, preserving, pickles, cakes, creams, jellies, made wines, cordials. And also bills of fare for every month of the year. To which is added, a collection of nearly two hundred family receipts of medicines, viz. drinks, syrups, salves, ointments, and many other things of sovereign and approved efficacy in most distempers, pains, aches, wounds, sores, etc. never before made publick in these parts, fit either for private families, or such public-spirited gentlewomen as would be beneficent to their poor neighbours." The recipes are easy to understand and cover everything from 50 recipes for pickling everything from nasturtium buds to pigeons to "lifting a swan, breaking a deer, and splating a pike," indicating the importance of understanding how to prepare English game. In contrast to some of the larger encyclopedic cookbook collections of the day, “The Cook Not Mad” provides 310 recipes and household information designed to be a quick and easy reference guide to domestic organization for the contemporary housewife. The author describes the content as "Good Republican dishes" and includes typical American ingredients such as turkey, pumpkin, codfish, and cranberries. There are classic recipes for Tasty Indian Pudding, Federal Pancakes, Good Rye and Indian Bread (cornmeal), Johnnycake, Indian Slapjack, Washington Cake, and Jackson Jumbles. In spite of the author's American "intentions," the book does include foreign influences such as traditional English recipes, and it also contains one of the earliest known recipes for shish-kebab in American cookbooks.

The French Cook

Lady Chesterfield called Louis Eustache Ude 'whimsical, good-natured, exorbitantly vain,' but he must have been a spectacularly gifted chef, able to please the most sophisticated upper-class palates of the day. As expressed in his cookbook, originally published in 1813, when Ude was cooking for the Earl of Sefton in Liverpool (whose service he left when the Earl's son put salt in one of Ude's soups), his recipes definitely were not meant for everyday meals, but they do represent the epitome of classic French cuisine and food service. The book is peppered liberally with French terms (vocabulary provided) and with elaborate techniques that must have been in use in the most elegant kitchens (but not necessarily beyond the reach of less elite cooks). The word soufflé first appeared in English in Ude's cookbook. Eleanor and George Parkinson opened a confectionery shop in Philadelphia in 1818 that became a renowned business with an outstanding reputation. Along with their son James, they were among America's most prominent confectioners. Their ice creams were particularly famous, and few nineteenth century American cookbooks failed to include several recipes for "Philadelphia Ice Cream." In writing her cookbook, Eleanor clearly states that, after studying both French and English works, she chose Read's Confectioner, a London publication, as the basis for her cookbook. However, she made many alterations based on her own experience with the "oldest, most extensive and successful confectionery establishment in the country," and she added recipes that utilized American ingredients. The book contains "directions for making all sorts of preserves, sugar-boiling, comfits, lozenges, ornamental cakes, ices, liqueurs, waters, gum-paste ornaments, syrups, jellies, marmalades, compotes, bread-baking, artificial yeasts, fancy biscuits, cakes, rolls, muffins, tarts, pies, etc." Plus over fifty different recipes for ice cream. Eliza Action's masterpiece set out the fundamentals of domestic English cookery and offered a wealth of dishes for every occasion. The recipes are a model of sensible instruction for preparing food simply but well. This authoritative book was not only a guide to the best English cooking, but unusually for the time, it also contained recipes for German, Indian, and Caribbean dishes. Acton's book introduced the now-universal practice of listing ingredients and suggested cooking times for each recipe, and it included the first print recipe for Brussels Sprouts. Original illustrations and instructions on basic techniques ranging from frying fish to roasting meat conveyed in Acton's elegant prose make the book a quintessential tome packed full of wisdom, common sense, and culinary delights. No wonder the doyenne of American woman's affairs, the editor of the most influential and widely read magazine of the day, Godey's Lady's Book, chose to adapt the book for her American readers. In her preface, Sarah Hale gushes that the work is well adapted to the wants of this country at the present time, and that it is so complete she has little to add except regarding preparation of foods that are more strictly American such as Indian Corn, Terrapin, and others. She carefully marked her additional matter in brackets, and she did revise some articles and terms not generally known here. Named by the Library of Congress as one of the 88 "Books That Shaped America," American Cookery was the first cookbook by an American author published in the United States. Until its publication, cookbooks printed and used by American colonists were British. As indicated in Amelia Simmons's subtitle, the recipes in her book were "adapted to this country," reflecting the fact that American cooks had learned to make do with what was available in North America. This cookbook reveals the rich variety of food colonial Americans used, their tastes, cooking and eating habits, and even their rich, down-to-earth language. Bringing together English cooking methods with truly American products, American Cookery contains the first known printed recipes substituting American maize for English oats, and the recipe for Johnny Cake is apparently the first printed version using cornmeal. The book also contains the first known recipe for turkey. Possibly the most far-reaching innovation was Simmons's use of pearlash-a staple in colonial households as a leavening agent in dough, which eventually led to the development of modern baking powders.

Published in 1851 in Charleston, The Carolina Housewife by "A Lady of Charleston" was described by Time magazine as an "incomparable guide to Southern cuisine". With over 600 recipes, this treasury of Southern fare acknowledges for the first time the contributions of African American and Native American cooks by including recipes such as Hoppin' John, Potted Shrimp, Seminole Soup, and numerous rice dishes.
Sarah Rutledge emphasized that The Carolina Housewife contained recipes that had been gathered from the community, tested in their own kitchens, and-a topic that still resonates today-appropriate for people of limited incomes. Other delicious recipes include Hominy Bread, Rice Griddles, Baked Shrimps in Tomatoes, Peach Sherbet, and Lemon Drops, all combining to make The Carolina Housewife "a treasure trove for social historians studying South Carolina culture and lifestyles," according to South Carolina Historical Magazine. This volume in the American Antiquarian Cookbook Collection, published in Philadelphia in 1850, is an exhaustive compilation of hundreds of methods, formulas, and recipes for culinary, housekeeping, agricultural, and medical issues of importance in nineteenth century households, assembled by an unknown physician. In his introduction, the 'eminent physician' cited as compiler of this fascinating volume states, 'There was a time when ladies knew nothing beyond their own family concerns; but in the present day there are many who know nothing about them.' His intention was to supply every possible bit of information about housekeeping, homemaking, farming, and medical care that contemporary women seemed to lack. His work contains hundreds of procedures, advice, and recipes organized in a whimsical hodgepodge without a table of contents or index to guide the reader. For example, a recipe for 'an excellent tooth power' is sandwiched in between 'a method of cleaning china' and 'how to stain paper.' Similarly, 'pickling tomatoes' can be found between 'means of stopping a runaway horse' and 'grafting grapevines.' It makes an engrossing, entertaining read that provides an intriguing portrait of nineteenth century lifestyles. Although many medical entries appear throughout the text, the final 20 percent of the book appears to be an independent and uncredited work entitled The Family Physician-such plagiarism was common in nineteenth century publishing. In fact, the disorganization of the material makes it likely that the entire contents of the book were taken from an existing volume or a number of sources and the 'compiler' simply collected other authors' work in this encyclopedic treasury.
